Smithfield, Isle of Wight County, on the south bank of the James River, is the "Ham Capital of the World." The Smithfield ham process involves hardwood-smoking salted hams made from peanut-fed pigs. The hams were hung up to age for at least 180 summer days. The result was a unique, flavorful product with a smoky aroma. Because of climate-control technology, hams can be made year-round. Smithfield Foods owns the last smokehouse in town and is the nation's largest fresh pork processor. It also markets hot dogs, sausage, and deli items.
