Wild ancestor:
The ancestors of today's tomatoes, which still grow wild in Peru, were the size of peas.
Soft and juicy:
Over the centuries, farmers bred many varieties of delicious, juicy tomatoes -- but they couldn't be transported very far, because they would quickly rot or be crushed.
Hard and flavorless:
Today, most supermarket tomatoes are picked green and hard, trucked long distances and then turned red with ethylene gas. Because they have been bred for yield, hardiness and "shelf life," not flavor or nutrition, their taste can be very disappointing. |
