Growing Oysters in Cancale:
For more than 3,000 years, humans have practiced various forms of "aquaculture" -- that is, growing aquatic plants like seaweed and raising fish and shellfish. Today, aquaculture provides about half of all the fish and shellfish people eat.
In Europe, 90% of cultivated oysters are raised in one country: France. And the French eat most of what they produce. On average, residents of France eat about four pounds (1.8 kilograms) of oysters every year, the most of any nation. |
